5 Best Healthy Vegetarian Lunch Recipes! Here is a list of best Healthy Vegetarian Lunch recipes that are easy to cook, would help you watch weight and keep you energetic all through the day .

1.Stir Fried Vegetables And Tomato Soup with Whole Wheat Toast

Take seasonal vegetables eg.Spinach, Kale, tomato, brocolli, mushroom,sweet potato, cottage cheese, Zucchini, and shallow fry them in your favourite oil.

Add italian seasoning and chilli flakes.

Once done spread them evenly on lettuce bed. Sprinkle salt as needed.

Enjoy with tomato soup(without croutons) and toasted whole wheat loaf.

Note:-Instead of cottage cheese you can add diced chicken.

2. Whole Wheat Pasta in sauted vegetables

Whole Wheat Spaghetti with sautéed vegetables

Prepare your favourite whole wheat pasta.

Saute chopped garlic with Italian seasoning.

Add seasonal vegetables and saute them well.

Add pasta,let it cook for a minute.

3. Greek yogurt, Sprouts , Sweet Potato

Its like a bento box meal.

Prepare sprouts salad by adding your favourite raw vegetables. Add lime juice ,salt and black pepper.

Saute sweet potato or you can bake them as well using olive oil.

4. Lentils salad with Salsa, clear soup, whole wheat toast with cheese

Prepare lentil salad using boiled lentils and seasonal raw vegetables. Add salsa.

Prepare clear soup with vegetable stock.

Toast whole wheat bread.

Serve on a platter with cheddar and grapes.

5. Kidney beans, Whole Wheat Toast with Cheese or Olive Oil.

Soak Kidney beans overnight. Once done, boil them .Let them cool.

Add finely chopped tomato, onion, cucumber. Sprinkle lime juice. Add salt and pepper.

Serve with whole wheat toast with brie or olive oil

Note:-I am a vegetarian ,that’s why my recipes are vegetarian. However feel free to replace cottage cheese or potato with your favouriet meat. The whole idea of these recpies is to keep your meals easy to make, yet keeping you full for a longer time.
