Winter Recipes To Keep You Warm And Healthy! Winter is just around the corner and for most of you it might have already arrived( unlike here in Bombay it’s still hot😔)
Nevertheless keeping the holiday spirit on, in this post I am sharing some of my favourite recipes to keep you warm and healthy at the same time!
1.Carrot Soup:- A winter favourite and rich in antioxidants and beta-carotene, this is my all time favourite thing to eat when I am not in a mood for an elaborative meal.

Ingredients:-
Carrots:-3-4 medium
Tomato:-1 small
Onion:-1/2(small)
Garlic:-3-4
Coriander:-To garnish
Salt and pepper:-To taste
Recipe:-
In a pan add 2 tbs of olive oil( or any cooking oil)
Add onions and garlic and sauté them till they are caramelised. Add tomatoes. After a minute add carrots and cook them till they are glazed.
Transfer all the contents of the pan into a pressure cooker or large cooking pot! Add water enough to immerse all the vegetables!
Pressure cook it till one whistle and then let it simmer for 7 minutes
If you are cooking in a pot then cover the pot with the lid and let it cook until all the vegetables become soft in texture.
Once cooked, strain the vegetables and let them cool down!
Blend them all together using a blender.
Add salt and black pepper.
Add coriander to garnish!
Enjoy hot with a brown bread toast!
2. Sarson Saag:- Saag is a delicacy in Northern part of India and it’s one of my favourites. I can probably have all through the winters! Rich in Vit A, C and K this dish is everything your body needs to keep healthy!
Ingredients
Spinach:-2 bunches
Sarson:-A bunch
Methi:-1/2 bunch
Onion:-1 small size
Garlic:-5
Tomato:-1 Roughly cut
Red chilli pwd:-1/2tsp
Coriander pwd:-1/2tsp
Turmeric:-1/2tsp
Recipe
Wash, clean and blanch and then strain the greens!
In a pressure cooker add the greens, onion, tomato and garlic! Add 1 medium size cup of water.
Pressure cook it until 2 whistles and then let it simmer for 5-7 min.
Let the pressure release!
Open the cooker and and let the vegetables cool down.
Now blend them well until you get smoothie like consistency(some people like it coarse which is fine)
Tempering
In a pan add 1tbs of ghee, add cumin seeds, finely chopped garlic, turmeric powder, red chilli powder, coriander powder.
Once the masala is ready add blended greens and cook it for 2-3 minutes.
Saag is ready, enjoy with makke ki roti!
3. Pasta Salad:- This Protein-packed recipe is perfect for the days when you want to eat good but keep your calories in check too.

Ingredients
Pasta:-200 gms
2 boiled eggs cut into pieces(you can remove the yolk if you like)
Cottage Cheese:-50 gms
Tomato:-1 medium
Onion:-1 small
Cucumber:-1 small
Corns:-25 gms
Lettuce:-100 gms
Lime Juice, Salt and Pepper:- To Taste
Recipe:-
Cook Pasta until cooked
Mix pasta along with the all the other ingredients except for lettuce.
Add lime juice, salt and pepper
Add lettuce
Enjoy with Brown Garlic Bread
4. Dark Hot Chocolate:- Rich in anti-oxidants and less in sugar, I discovered this version of hot chocolate on a day when I it was past midnight and I was craving for a warm drink and all I had was Amul Bitter Dark Chocolate in the fridge. https://www.amazon.in/Amul-Chocolate-Bitter-150g/dp/B00XYACDGC

Ingredients
Bitter Dark Chocolate:-100 gms or according to taste
Honey:-1 tsp
Milk:-1 medium sized mug
Recipe:-
Blend all the ingredients in a blender except for honey.
Transfer the liquid blend into a pan and heat it before it comes to boil.
Switch off the flame! Add honey!
Sprinkle cinnamon powder!
Enjoy with popcorn!
